Are you ready for a treat?

Spring is when it flows, but fall is really the season for maple syrup 🍁 to shine in pies, squares, comforting puddings and hearty breakfasts.

This old-fashioned maple syrup is made according to the most traditional methods in Beauce (Qc) by Carmelle, who learned to boil as a child when she saw her father working in the sugar shack. Her own, built around 1950, has retained its original appearance. The only concession made to modernity is an old tractor from 1951 purchased in 1999 to replace the horse. Sap harvesting from 1,000 tapped maple trees is still done using traditional buckets and boiled using an open top boiler.
